[ACM-15881] Exclude YAML files from sonar scans

Description

To provide a more accurate assessment of our code quality, we will exclude YAML files from the analysis in this repository. These files currently include manifests from other squads, which are skewing the quality score for the actual operator. We plan to reintroduce YAML scans at a later stage.
