We have informally offered "mentored contributions" and these have been successful. However, this concept is not written down anywhere.

This PR restructures the contribution guides and adds a new section about "Mentored open-source contributions". I envision this being something we can share with interested parties and we can gradually adapt it as we learn from experience.

I've requested review from @neuroinformatics-unit/neuroinformatics-all because this affects everyone. There's no commitment of course, but I'd like everyone to agree.

In particular, it would be great to hear from @niksirbi and @alessandrofelder who have been the mentor in some version of this.

Also FYI I think we probably link to the contributing guides elsewhere (e.g. readme's), so those links will need to be updated.
