docs(inputs.dovecot): Document plugin not working for version 2.4+

Summary

Dovecot version 2.4 and newer do not contain the old-statistics plugin anymore and therefore the plugin stops working.
This PR adds a comment to the README documenting this limitation. It also fixes the integration test by pinning the image to the latest 2.3 version of Dovecot. Additionally, the PR adds an information on the container including the image digest so we can easily identify which image is used.
