build(deps): bump esbuild and next-axiom in /examples/trpc-app-router

Removes [esbuild](https://github.com/evanw/esbuild). It's no longer used after updating ancestor dependency [next-axiom](https://github.com/axiomhq/next-axiom). These dependencies need to be updated together.
