Previously, a specific intake-esm version was desired (2023.7.7), but likely it's not needed any longer, and may be causing other problems.

I think this could be the cause of the intermittent seg faults, but I'm not completely sure. I hand-created an environment with these changes and it worked, while the installed CatalogBuilder environment fails.

We should probably unpin the intake-version anyway so we get bug fixes, and I think it may be making the conda solver result in a lower python version than it would otherwise (3.9).
