Visualizations (Graph) do not display all fields

Example:
Planning Permits Data --> Create a new graph view.
The only options for Axes are number and date fields - id, issuedate, finaldate, folderssn. One could create a chart with folder name to get a count for each folder name over a period of time (issue date). So the X axis would be issue date and Y axis would be count and the actual data would label the folder name on each bar.
