I have managed policies to disable things. For instance where flags got removed. I put them in /etc/chromium/[subfolders] as always. When I go to chrome://policy nothing is enabled.

Please find out if the functionality is available with your configuration using vanilla upstream chromium. If so, this is an issue with the ungoogled-chromium patchset and an issue should be opened here: https://github.com/Eloston/ungoogled-chromium. Otherwise its an issue with arch packaging in general in which case you would need to file a bug in the arch bug tracker.
It works in ungoogled on windows and debian based distros. I will have to try installing regular chromium package in a VM of arch. I don't want to screw up my profile.
