- 2 large onions, coarsely chopped
- 1 bell pepper, coarsely chopped
- 5-6 large garlic cloves, diced
- 1 jalapeño, diced
- 2 tbs olive oil
- 1 tbs chili powder
- 1 tsp cumin
- 2 tsp salt
- 28 oz can tomatoes, with juice
- 1 zucchini, coarsely chopped
- 15 oz can kidney beans
- 15 oz can black beans
- 1 cup corn
- 1 square semisweet baking chocolate
- 3 tbs cilantro
Saute onions, peppers & garlic in oil until starting to brown. Add chili powder, cumin, and salt, cook 1 minute. Add tomatoes with juice & zucchini, simmer partially covered 15 minutes. Add beans, corn, and chocolate, simmer 5 minutes. Add cilantro.
Optional, for non-vegetarians: add 1 lb. ground beef, turkey, chicken, or pork, browning in the pot before sauteing onions.
