Mexican corn chowder

Ingredients

  • 1/4 cup butter
  • 2-3 stalks celery, diced
  • 2-3 carrots, diced
  • 1 onion, diced
  • 3-4 cloves garlic, minced
  • 1 tsp. oregano
  • salt, pepper to taste
  • 3 1/2 cups corn
  • 1 cup chicken broth
  • 2 chicken breasts
  • 2 tsp. chile pepper, diced
  • 2 cups milk

Instructions

Melt butter over medium heat and cook celery, carrots, onion, and garlic until soft. Add oregano, salt, pepper, cook for 2 minutes. Add remaining ingredients and simmer. Add milk and heat.
