Makes a large amount of stuffing, suitable for a group at Thanksgiving. Halve quantities for a more normal meal.
- 1 cup butter
- 2 cups onion, chopped
- 2 cups celery, chopped
- 12 oz mushrooms, sliced
- 1/4 cup parsley
- 2 packages Pepperidge Farm stuffing with herb seasoning
- 4 (+/-) cups chicken broth
- 2 eggs
Saute onion, celery and mushrooms in butter until soft. Stir in parsley. Mix into stuffing. Add eggs and some chicken broth; stir. Continue adding broth until stuffing is moist, but not soaking wet. Bake in two 9x13 inch baking dishes at 350° for 45-60 minutes.
