[Refactor]: Update Erigon Docker Image Tag

Refactor Description

Docker image for Erigon EL must be updated to erigontech/erigon, starting from version 2.60.7:

• https://github.com/erigontech/erigon/releases/tag/2.60.7

Version 2.60.7 is also the last release that works with the old repo thorax/erigon.
This implies that Stereum can only support updates for higher Erigon releases if the suggested change is implemented and Stereum has a new release.

Reason for Refactor

Erigon Breaking Change since 2.60.7:

• https://github.com/erigontech/erigon/releases/tag/2.60.7

Potential Risks

None as long as the next Stereum release includes this change before next Erigon release.
