Already "Outdoor activities" main category has 3 subcategories with object search: "Paddling", "Climbing" &
"Mountain bike routes". Would be great - in the event of numerous local (at the city level) of pedestrians/walking routes - to include the subcategory "Walking routes" searching for routes tagged route=foot.

There's already a "Hiking routes" category under Transportation/Walking. route=foot is currently not included.
I think, having a "Walking routes" category under Outdoor activities (and keeping "Hiking routes" in Transportation/Walking) would be confusing. What do you think:
shall I include Walking routes in Hiking routes and maybe rename to "Walking and hiking routes"?
Dear Stephan, my answer is a little bit complex because mentioned in your answer problem is very complex (like every attempt for life categorization) ;-)
So:
For now, for rapid improvement, option no 1 is great - please implement it.
For future, we can think on reordering categories (because I cannot think on Walking as a form of Transportation, more as a kind of activity on fresh air + infrastructure elements - kerbs, crossings, footways etc.)
2a. From "fresh air activities" we can take "trails for mouintain bikes" to Transportation->Bicycle subcategory (there are already "trails for bikes")
2b. Kerbs & Footways take to Infrastructure->Ways (already present)
2c. Transportation->Foot (trails & useful in...) let's take to "Fresh air activities"
