Once I've been granted superuser capabilities, is it possible for SU app to relaunch the application as root:root? or to seteuid/setuid to root?

You mean for the Android applications themselves, rather than for the shell they are attached to?

This would be a project of unimaginable complexity, and with little to no benefit.
