Since there is no brew cask anymore and the officially versions from the website are not working properly on OSX High Sierra you should install the latest version: https://www.pdflabs.com/tools/pdftk-the-pdf-toolkit/pdftk_server-2.02-mac_osx-10.11-setup.pkg

I believe this should be updated in the readme.md
