Make a tenant for each theme in Hyku-demo

Summary

As discussed in Rob's office hour, in hyku-demo create 4 new tenants. Each tenant should display a different theme. This should make it easier to switch and check for styling changes.

Also populate each tenant with a significant amount of data so we have something more realistic to look at.
