As opposed to the unmaintainable hot mess it is now, I'd like to convert the selectable profiles to stable and unstable.

Stable will be standard Gentoo portage with minimal unmasks and keywords to make applications work.
Unstable will be ~* Gentoo portage with minimal masks to make applications work.

The current setup will be moved to unstable first and stable will be setup anew.
When stable works, unstable can be cleaned up.
