- 2 cups rinsed long grain white rice
- 1 bay leaf
- 1 teaspoon olive oil
- Salt to taste
- 2 tablespoons fresh cilantro (minced)
- 2 tablespoons fresh lime juice from 1-2 limes
- 2 tablespoons fresh lemon juice from 1-2 lemons
- Add bay leaf, olive oil, and salt to rice and cook according to package directions.
- When rice is done, remove bay leaf and stir in cilantro, lime juice, and lemon juice.
- Add salt to taste and serve.
