Chicken Tortilla Soup

Yield: 8 servings
Time: 1 hour

Ingredients

  • 10 cups chicken broth
  • 3 cloves garlic (finely chopped)
  • 1/8 teaspoon cayenne pepper
  • 6 boneless, skinless chicken breasts
  • 1/2 cup fresh salsa
  • 3 green onions (chopped)
  • 1 carrot (shredded)
  • tortilla chips, broken up into bite-sized pieces
  • 1 cup white cheese
  • sour cream

Directions

  1. Put chicken broth, garlic, cayenne pepper, and chicken breasts into a sauce pan and bring to a boil. When meat is completely cooked, remove and cut into bite size pieces.
  2. Return chicken to pot and add salsa, green onions, and carrot. Simmer for 5 minutes.
  3. Ladle into warm bowls. Top with tortilla chips and cheese. Garnish with sour cream. Serve with warmed tortillas.
