Mexi Ground Beef Chili Macaroni Casserole

Yield: 8 servings
Time: 1 hour

Ingredients

  • 1 pound ground beef
  • 2 tablespoons minced fresh garlic
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 or 2 teaspoons dried chili pepper flakes
  • 2 (1 ounce) packages taco seasoning mix
  • 1/3 cup grated parmesan cheese
  • 8 slices bacon, cooked crisp and chopped
  • 8 ounce can tomato sauce
  • 2 10 ounce cans tomato soup
  • 2 tablespoons brown sugar
  • seasoning salt
  • pepper
  • 4 cups shredded Tex-Mex cheese, divided
  • 3 cups cooked macaroni (1-1/2 cup dry)

Directions

  1. In a large skillet brown the beef with garlic, onion, bell pepper, and chili pepper flakes. Drain any fat.
  2. Add in taco seasoning mix and parmesan cheese. Mix to combine and cook 1 minute.
  3. Add in the bacon, tomato sauce, tomato soup, and brown sugar. Simmer for 30 minutes, stirring occasionally.
  4. Preheat oven to 350F.
  5. Season with seasoning salt and pepper. Mix in 2 cups of the Tex-Mex cheese. Fold in the macaroni.
  6. Transfer the mixture to a greased 13 x 9 inch casserole dish. Sprinkle with grated Parmesean sheese and then the remaining 2 cups of the Tex-Mex cheese.
  7. Bake uncovered for about 20 minutes, or until bubbly and the cheese has melted.
