When people feel the need to shut down a discussion simply because they disagree with others, it shows the weaknesses in the original proposition. It's disrespectful to the principles of open debate and it's disrespectful to people's ability to have an intelligent conversation.
I completely agree with @brianteeman (both in #36888 and in another place where similar "anti-Google" agendas were pushed, #37050). There is no "improvement" to J! 3.x by turning off Google fonts off by default for new installs. Further, what about third-party extension developers who may use those fonts and assume that they're available? Are we going to force third-party extension developers to have to rewrite their products to workaround this "improvement"? It's obvious to anyone reading this discussion that this "issue" is not driven by bug-fixing J! 3.x (for the remainder of life while it's still supported) but rather it's driven by people who have issues with Google.
I strongly believe that this "fix" is a retrograde step both in terms of the continued reliability and maintainability of J! 3.x as well as for the reputation of J! as an OSS project. There is no urgency in making this change to J! 3.x (just as there was no urgency in fiddling around with FLoC despite the lessons that we may have learned from the mad rush to implement it in the first place); just because FLoC was a mistake (and, it's been corrected) doesn't mean that one has to throw the baby out with the bath water: Google is not inherently bad, evil or some tyrannical monster controlling software development! If one has issues with Google then keep them to oneself. I don't care what Google may offer. If I choose to use Google services then I don't want to be dictated to be people who think that I'm crazy but, by the same token, I don't want to have to jump through hoops to use something that ought to be fairly straightforward.
I will not recommend updating to J! 3.10.7 while this "fix" is part of the release. I don't care what happens in J! 4.x (as far as what goes in or stays out w.r.t. Google); J! 4.x is a whole other story and we'll have to see how that story unfolds in time.
