I think there are a couple of spoonerisms in there already when anagramming, but I'd have to check to make sure. Are you missing any in particular?

At this stage any major additions to the game are unlikely, at least from me. Also, the spoonerisms section of Nord and Bert would be hard to top.

Not sure. Looking through the source, I did find rubber stamp-rump stabber, but I don't know if it is good or funny enough to post on that Reddit. There may be others in there, though.

Again, Nord and Bert would probably be a better choice of game for spoonerism aficionados. All included spoonerisms are listed here (link to lemonamiga.com). Just scroll down a bit to part 7, Shake a tower.
