Auto update the datalog files when we release a new version of the extension #144

We also have to push to the catalog to allow the new version to be shown/installable. For this, an update is needed to https://github.com/containers/podman-desktop-catalog/

I suggest we automate the release process as much as possible, ...

... though this might also be challenging, as when we move this to brew, we can not easily trigger any updates to an external repo.
