Convert Pages to Word: Workflow?

Word or google docs? If we do google docs, can we update a document in place?

What would the workflow be for releasing these -- update with an "official" release, or should we sync them to commits?
How do teachers get new versions of the files?
Does track changes help if teachers want to reconcile two documents? Does that work with gdocs?
Where do we keep the word versions, in the repo?
