- This is designed to be soy-free
- 1/2 medium onion
- 1 large carrot
- 3 cloves garlic
- ~ 1.5 cup cooked day old rice (harder drier rice is better)
- 2-3 eggs
- For carnivores, add a sausage
- Finely dice onion
- Finely dice carrot
- Dice garlic
- Beat eggs
- 1 tsp salt
- 1 tsp black pepper
- ~4 tbsp ketchup
- Heat up oil, medium heat
- Add onion, garlic, carrot, salt; cook until onion is translucent
- Add pepper and rice; stir and break apart rice until well mixed, ~5 min
- Add ketchup and mix well

- If you want a fancy plating, oil up a bowl with oil and then put rice in it. Use it as a shape and then put the rice on a plate.
- Top the rice mound with the omelette. Top with some more ketchup / whatever toppings you like.
