NOTE I have no clue if key limes are neccesary, I used regular old limes ¯\(ツ)/¯
Inspired by The Ultimate Key Lime Pie - Joshua Weissman
Filling
- 4 egg yolks
- 1 tablespoon (4g) fresh key lime zest, roughly chopped
- 14 ounces (400g) sweetened condensed milk
- 1/2 cup (120ml) key lime juice
Crust
- Finely powdered graham crackers (I have no quantity written down, but I think maybe 2 cups, I just added more until the crust seemed like a good consistency... looking for wet sand here)
- 1/3 cup brown sugar
- 3/4 teaspoon salt
- 3/4 cup melted butter
Preheat oven to 350°F

Whisk yolks then combine lime zest

Stream in sweetened condensed milk

Add in the lime juice and mix

Cover mixture and let rest at room temperature for 20 minutes

Combine all crust ingredients

Press into pie plate

Bake @ 350°F for 10 minutes

Pour in pie filling and bake at 350°F for another 15-17 minutes

Remove from oven, refrigerate until completely chilled (ovenight is good)
I didn't think I liked key lime pie, but this was super good!
