Timezone issue

Hi guys,
Im having a bit of a timezone issue with my containers. I have setup my .env file in the docker folder as described here. And I have set it to Australia/Melbourne. Portainer reports all containers as having the correct TZ set.
However, some containers are insisting to use Zulu (UTC) as their times. Watchtower, Plex, and quite a few others. Some report correct time however.
Any ideas what to pursue?

I've sorted it out guys. Not sure whats going on with my server but a re-create sorted it all out.
