Is this normal? Interface itself is extremely slow where it is pointless to even try to use. I am using this image:

It is slow even on fast devices. It builds everything from source. I could do it differently with a ppa, but then it only will work on one distro version. This should work on all Ubuntu and Debian versions with GPU drivers.
There is another script that does the ppa from salva.

Sorry I am getting back so late, but just wanted to see if there was any more detail on a better experience with Steam on the Edge 2 Pro....I am using this image which for the most part is working and NOT breaking for my basic needs for GPU acceleration, etc: https://www.armbian.com/khadas-edge-2/

Can you share more info on the salva ppa for steam and if it would work fine on this image?

No idea, I don't have experience with steam on arm. Check the microlinux yt channel for more info on that or ask Salva there how to do this. I just added a function that points to a file from ptitseb for steam but actually never tried it myself. If you know more feel free to suggest improvements.
