test catchup in native demo

In the native demo, we spin up all the nodes together, which prevents us from effectively testing catch up since no node is missing any data. Therefore, there should be a node/nodes that joins the network late in the native demo and does catchup. This would allow us to stress test the catch up process, especially for the sqlite node, which has strict locking
