7.4 is nearly EOL and is soon not going to support the latest versions of WHMCS, Is updating it as simple as changing the web server configs and the docker image base image and restarting?

Apologies for such a late response. Yes, that's all it should take to update the php version. I'll make sure to update the repo too.
