Two questions:

Is nvidia-smi supposed to show the spoofed GPU, or the original GPU?

Is there a simple test I can run to check if the installation was successful?

The original GPU on the host machine. The spoofed GPU inside the VMs,

Not really, unless you count creating a mediated device, attaching it to a VM and booting the VM, then just do that.
