Support for hydromt>=1

Enhancement Description

We currently pin hydromt<1 since the hydromt_delft3dfm requires updates before using hydromt>=1. Since pre-v1 hydromt is not being developed anymore, it is wise to update to hydromt>=1 soon. More info in https://github.com/Deltares/hydromt/blob/main/docs/guides/plugin_dev/migrating_to_v1.rst

Workflow files also might have to change: https://deltares.github.io/hydromt/guides/plugin_dev/workflows.html#workflow-yaml-file >> not so relevant for users of hydromt_delft3dfm since we use setup* everywhere.
