I'd suggest deleting the .optifine folder and trying again, not sure which part has failed but OptiFabric has ended up trying to work with a corrupt jar

I have pretty much the same crash log and deleting the folder does not work

I'm using Optifabric version 1.11.18 with Optifine version 1.16.5 and Fabric API 0.37.0 (I reverted by one version to troubleshoot this and it didn't work)
