Could you please provide the URL to the instructions you are referring to? I want to make sure they are the correct instructions, since they should answer your "how" questions.
Basically, if you have a current version of Allsky, stop it and rename the allsky directory to allsky-OLD, then do the git clone ... per the instructions. The install script will see you have an allsky-OLD directory and ask if you want to use it.

If you are comfortable doing so, please add --branch v2024.12.06_01 to the git clone command (e.g., git clone --branch v2024.12.06_01 ....
That will download an early copy of the February 1 release which will make things a little easier.
